The countdown to the Jackals' home 2013-14 home opener on October 25 is at 81 days. Before you know it the heat of summer will be a distant memory and we'll all be gearing up for another great season of ECHL hockey in the Twin Tiers.

In this issue of Jackals Monthly we'll tell you about how the team's roster is shaping up, give you an update on all the exciting First Arena events in August, and much more.

Jackals Announce First Four Signings for 13-14 Squad

Jackals fans waited patiently all summer for the team to announce its first signings for the upcoming season. Their patience was rewarded when, at a press conference on July 29, Elmira announced that forwards Rob Bellamy and Artem Demkov, along with defensemen Kyle Bushee and Jordon Southorn, had re-signed with the club. Southorn and Bushee were the Jackals' two top scoring defensemen last year while Bellamy and Demkov combined for 43 goals.

There is a ton of familiarity on all sides of these signings with Bellamy and Demkov coming back for their third seasons in Elmira, and Bushee and Southorn signing on for their second. The quartet brings a combined 16 years of professional hockey experience to the Jackals' roster and gives the team a solid veteran core around which the roster will be shaped.

Fans can expect to see at least one announcement each week that will provide an update on which players have signed with the club for the season.

First Arena Renovations and August Schedule.

Completed sheet rock work inside First Arena's new brew pub.

First Arena's new owners, Tom Freeman and Nate Cook, have promised to turn First Arena into the jewel of downtown Elmira. It has only been four months since they assumed control of the arena, and the Jackals, and the transformation is in full swing.

The highlight of the current work is the construction of the new brew pub/microbrewery that will occupy what used to be the Jackals Den, The Doghouse merchandise store, and other storage space along the Main St. side of the building. As you can see in the photo on the left, things are coming together quickly with all of the sheet rock hung. While an official opening date hasn't been determined yet, everyone involved is anxiously awaiting grabbing their first bite and pint once it opens!

Also, starting today, Cook Painting has begun work on providing a facelift to the building's exterior. You'll notice the equipment set up along Main and Gray Streets that is being used to power wash and sand the facade to prep it for a fresh coat of paint. All of this, and more down the line, is being done to enhance the experience of attending an event at First Arena.

With that said, there are plenty of arena events this month to get excited about. Three more editions of Gary's Body Shop Comedy Club at First Arena, Roller Derby, and Disney Junior Live On Tour! Pirate and Princess Adventure are all on tap in August. Further down the line are the major concert events with Travis Tritt scheduled to perform on September 6 and Air Supply set for October 17. Tracking Blade

Here's Blade visiting the Compeer Festival on July 20.

Blade beat the heat of July by spending a ton of time visiting Jackals fans throughout the Twin Tiers. He made stops in Mansfield and Corning for the Fourth of July, hung out at Wisner Market, and visited a number of fairs and festivals including the Chemung County Fair.

Now that we're in August, one of Blade's favorite annual appearances is coming up. You can see him at Corning's Race Fever this Thursday, August 8. Help Blade, and the rest of the Jackals staff get pumped for the Cheez It 355 at the Glen which is this weekend at Watkins Glen International Raceway.

Jackals Bites

Summer Dogs - Will be a hit at any 4th of July party. Hockey and food is a natural fit so every month we are going to share a recipe that we love. The recipes will come from sources all over the place whether its a Jackals player, a front office staff member, or even one of you loyal readers! If you'd like to submit a recipe email it to ray@firstarena.com.

This one is special for all the hockey moms who are preparing for the upcoming season. This recipe for chicken chili is packed full of protein to help your mites, squirts, and pee-wees fuel up before a game. Plus, it is warm and hearty, and will go perfectly in a thermos so you can enjoy it from the stands while you enjoy the game.

This one takes about 20 minutes to throw together in the morning, unless you want to use chicken breast instead of ground chicken. If so, cook the chicken the night before and just chop up and add to the crock pot in the morning.

Chicken Chili

Ingredients 1 lb (or more) ground chicken, or 2 chicken breasts cooked and diced. 1 onion chopped Couple cloves of garlic 1 green pepper 1 red pepper 1 can of baked beans 1 can kidney beans 1 can chickpeas 1-2 cans of diced tomatoes 1 cup frozen corn or 1 can of corn 1 cup green beans or 1 can of green beans 2-4 tsb chilli powder Salt and pepper to taste You can add other spices depending on your preference (e.g. cilantro, hot sauce, garlic)

Directions

Cook chicken breasts the night before or fry ground chicken in the morning. Add onion, garlic, and red and green diced peppers to the frying pan and cook for approximately 5 minutes (or until tender). In the meantime, add baked beans, kidney beans, chickpeas and diced tomatoes to crock pot. If you are using canned corn and green beans add them now as well. Add contents of frying pan to crock pot, along with chilli powder, salt and pepper, and additional spices if desired. Cook 6-8 hours on low, or 4-6 hours on high. If you are using frozen corn and green beans, add them 30 to 60 minutes before you plan on eating. Chicken Chili tastes delicious served over rice and topped with shredded cheese.

Don't forget that if you are looking for a hockey fix, the Elmira Jackals annual Pro Placement Camp is being held at the recreational rink on August 30 to September 1. It is free and open to the public, and you can come watch aspiring players battle it out for a spot in the Jackals' main camp.
