August 3, 2015 - Northwoods League (Northwoods)
Madison Mallards News Release
Madison, Wis. - The Madison Mallards are excited to announce details regarding the 2015 Mallards Double-Decker Pizza Bus Chef Series, which will take place during Tuesday's Major League Dreams Showcase and Mallards home games this Wednesday and Thursday night at the Duck Pond. The series will feature three nationally and locally renowned chefs, who will prepare at least two special pizzas and one appetizer in the Double-Decker Pizza Bus for fans at each game. Twenty percent of pizza bus sales during the games will be donated to local charities.
Jonny Hunter, who co-owns Madison's Underground Food Collective and also serves as a butcher and chef at the restaurant, Forequarter, will prepare pizzas and appetizers during Tuesday's double-header showcase. Patrick McCormick, from Oliver's Public House, previously noted to be representing Salvatore's Tomato Pies, will prepare pizzas and appetizers during Wednesday's game against the Alexandria Blue Anchors. The Double-Decker Pizza Bus will prepare pizzas on Thursday under the direction of Laila Borokhim of Layla's Persian Food restaurant.
Hunter, a James Beard Award Finalist for excellence in cuisine and culinary arts, will serve up two original and hand-made pizza recipes. The first will include a charred broccoli rapani, pepperoni, tomato, garlic, pleasant ridge reserve and mozzarella cheese. The second will include green tomatoes, arugula, parmesan, spicy peppers, fried corn and fresh cheese. Hunter's appetizer will be green chorizo corn dogs with sour cream dip.
McCormick will bring to Wednesday's game two separate pizza recipes for fans to enjoy. The first will include spicy chicken verde, roasted corn, black beans and a choice of cheese. The second will include baby kale and basil pesto, roasted cauliflower, fire roasted mushrooms, feta crumble and a blend of cheese. McCormick's appetizer will be jalapeno and cheddar pretzel bits with a brat and side of gravy. Borokhim's menu for Thursday will include a pizza with goat cheese, banana peppers, turkey sausage and pomegranate barbeque sauce and an appetizer of lima bean fritters.
The Double-Decker Pizza Bus Chef Series will also include Friday's regular-season home finale at the Duck Pond. Patrick DePula, representing Salvatore's Tomato Pies, will serve up his own recipe of pizzas and appetizers on Friday.
