The name is not the big of a surprise, one of my friends who worked for the UFL told me Omaha Mammoth was also one of the finalist names before they decided to go with NightHawks.

Unicorns don't count as extinct because they never made it to Noah's ship like Mammoths.
We know Mammoths existed because we have their DNA, we have no DNA for Unicorns.
Any animal that wasn't in line for the arc , is considered mythological, others that were in line that may be not be around today are considered extinct.

I don't know , after my bible studies class I understood that Noah refused to allow them on.
